Tonight we gathered in Orchard Room at Earlham College for the toughest 100 mile radius potluck yet!

We ate very well, with turkey, newspaper-ripened tomatoes, homemade pasta, Japanese omelets, squash bread, chai and so much more!

I brought butternut squash-bean soup, with several alterations. I used anasazi beans instead of black beans, since I grew anasazi beans in my garden. Black beans would have been much tastier, though, I think. Instead of peppers, I added frozen corn from my parents’ garden. I added one onion.

I used cilantro from our garden, dried two years ago, and I couldn’t even taste it! I did cheat and use both cumin and salt. I skipped the broth, and just used water. Instead of chili powder, I used two dried jalapeƱos. It was definitely spicy, but could have been stronger.

Oh, and I skipped the sour cream (which would have been great!) cause I didn’t have a local source. Well, I could have made it from local milk, but wasn’t that ambitious this time!

I soaked the beans overnight and put them in the crockpot all day. I lightly stir-fried everything else last night, and dumped it in the crockpot this afternoon.

I also made squash bread, made with more of my parents’ delicious fancy French squash. I used honey instead of sugar, from Centerville. Once again, I used orange marmalade (not local) instead of zest. I skipped the glaze. The flour was from Bear’s Mill in Greenville, OH.

    I’m curious about the Japanese omelet — is that like what I call okonomiyaki? (kind of a cabbage pancake?)

    it was delicious! just a bit sweet. eggs, a little sugar, soy sauce, and some kind of rice wine. so a few non-local things, but the eggs all from Tom’s own farm.
